Ingredients (per serving)

  • 60g black tapioca pearls
  • 150ml strong brewed black tea (Thai tea blend or Assam), cooled
  • 15–30ml fructose (to taste)
  • 60ml evaporated milk (or milk of choice)
  • Ice

Method

  1. Cook the tapioca pearls in boiling water following the pack instructions, then rest and drain.
  2. Brew a strong black tea and let it cool.
  3. Stir fructose into the tea to taste.
  4. Add the pearls and ice to the cup, then pour in the sweetened tea.
