Ingredients (per serving)

  • 60g black tapioca pearls
  • 30–40ml brown sugar syrup
  • 15–30ml fructose (to taste)
  • 120ml brewed black tea (e.g. Assam), cooled
  • 120ml milk (dairy or plant-based)
  • Ice

Method

  1. Cook the tapioca pearls in boiling water following the pack instructions, then leave to rest and drain.
  2. Toss the warm pearls in brown sugar syrup and leave to soak for 5–10 minutes.
  3. Brew a strong black tea and let it cool.
  4. Spoon the syrup-soaked pearls into the cup and swirl the syrup up the sides.
  5. Add 15–30ml fructose to taste for the right sweetness.
  6. Add ice, then pour in the cooled tea and milk.
  7. Stir well and serve with a wide boba straw.
