How to cook
Bring water to a rolling boil (one part pearls to seven parts water), add pearls, stir to prevent sticking, and boil for 20-25 minutes (slightly less than 9.5mm). Turn off the heat and rest covered for 25 minutes. Drain and transfer to brown sugar syrup before service.
When to choose 7.5mm over 9.5mm
7.5mm pearls are smaller and pass through narrower-bore straws (8-10mm). Use them for milkshakes, smoothies, frozen yoghurt toppings and dessert garnishes where the standard 12mm bubble tea straw is not appropriate. They are also faster to cook than 9.5mm pearls.
