Prepare and Making Tapioca Pearls

WHAT ARE TAPIOCA PEARLS? 

Tapioca pearls (boba) are small chewy balls made from tapioca starch. Typically, these spheres are black in colour and are used for bubble tea. Although boba has a gelatinous texture, no gelatin is used in the process of creation. Therefore, this makes these small chewy spheres vegan friendly. Boba are naturally translucent and white in colour. However, black food colouring or brown sugar is often used in the process. This is to achieve the familiar black colour. Black boba pearls were created for an aesthetic purpose to contrast with the colour of milk tea.

HOW TO MAKE PEARLS

Cook on a hot plate / induction hob) Weight ratio: Tapioca Pearl: Water = 1:2.5 Ingredients: Tapioca Pearl (1kg)

Water (2.5L)

Fructose or Brown Sugar Syrup (100ml) Time: cook 25minutes, sit covered 15 minutes

Instruction:


1) Sieve the tapioca pearl, taking out the crushed pearl bits.

2) After the water is boiled, put the tapioca pearls in the pot and stir continuously to prevent pearls from sticking together.

3) After the tapioca pearls start to float, start timer, cook for 25minutes and turn the heat to medium. The tapioca must be stirred every 5 minutes to prevent sticking to the pot.

4) After the timer sounds, cover the pot, turn off the fire and let it sit for another 15 minutes.

5) After 35 minutes, test if pearls are well cooked. If not, let them sit for 5 more minutes till pearls are well cooked. When well cooked, pour out the excess water and use cold water to cool down the tapioca.

6) Add 10ml fructos or 10ml Brown Sugar Syrup to flavour.
